Simply Delicious Steamed Chard

Cut a bunch of chard leaves and stems. Put several rinsed leaves on a cutting board and slice across all every 2 inches. Put the chard in a pan with a small amount of water. Steam for 10 minutes or until desired tenderness. Serve with butter, salt, and pepper.

Potato Leek Soup

Potato Leek Soup

3 medium sized potatoes, peeled and cubed
6 Leeks or small green onions
4 1/2 cups chicken broth (or water or vegetable broth)
Clean leeks. Chop off root and the green parts of the stem and discard.* Use only the white part of the stem slicing and adding it with the peeled and cubed potatoes and broth in a 4-quart pot. Bring to a boil, then turn heat down and simmer for approximately twenty minutes or until the potatoes are tender.

Green Pepper and Cottage Cheese

Green Pepper and Cottage Cheese

To replace a salad on a busy night, halve a green pepper and clean out the seeds and pulp. Fill the halves with cottage cheese. This makes a quick addition to complete a meal.

 

Microwave Corn

Microwave Corn

Microwave an ear of corn for a quick side dish. Microwave one ear while still in its shucks, from one to two minutes for perfect taste!!

 

Grilled Corn

Grilled Corn

To grill corn, soak the ears in water for several hours before hand. The shucks will absorb water which will steam the corn. Grill, gently turning a few times, until the shucks start to turn brown, approximately 7 minutes. Do not let the shucks dry completely out before removing from the grill. Corn, steamed and grilled, will be absolutely delicious, and nutritious!!
